Vegan and gf lemon meringue pie

This pie has been quite the project. We began working on it last year for my birthday in January and only now , a year later, I can finally say we did it: a vegan and gluten free lemon meringue pie. We have had to deal with terrible crusts, aquafaba that tasted like kitchen soap, and a filling that was way too sweet, lumpy, and did not actually stay in the pie when you cut a slice. But now the time has finally come: a not terrible version you can actually make!

Apple tray bake

This tray bake is very simple, and if you don’t have any vegan powdered eggs – I always use Organ powder and it’s really very easy to use – you can replace them with three regular eggs. Especially when you’re working with a simple recipe, it’s incredibly important that you use the right ingredients. The almond flour and the delicious apples in particular gave this tray bake its wonderful taste and smell. And seeing as this tray bake also isn’t as sweet either, we finished it off with some powdered sugar
