Bakers and Fakers 5/5 Vegan gf suikerbrood

Bakers and Fakers 3/5 Lemon Poppy Seed Cake

Bakers and Fakers 1/5- Luchtige witte broodjes

Vegans do it better chocolate cake

Our aim with Food Bandits is to share some delicious cakes and pies, occasionally a dinner recipe - which is somehow always way more popular than cake recipes - and to provide allergen friendly options. Baking vegan and gluten free is not that difficult once you know the tips and tricks or in other words: the chemistry behind baking (also we have a whole series on the blog about that subject , bet you didn’t know in school that baking a pie equals chemistry). Eating more plant based is the future but it doesn’t mean that vegan is always better..until this cake came along and now I can safely say: vegans? They do it better.

Oat blueberry scones vegan gf

There are cookbooks that you just keep on using and reading and might even add notes to. This book is filled with flour, stains, old notes and even a few postcards. I find it soothing to bake from a book where you know the end result will be delicious. And with most recipes I try to add something or even with the risk of sounding arrogant: I improve the recipe (most of the time it is adding chili and other spices because people don't use enough chili). But with this recipe- and I have made it over 5 times there is nothing to improve

Hummus, the real deal

I think most of us know by now that many store bought hummus isn’t really hummus. More of a scavenger hunt for three chickpeas, a lot of oil, if you are lucky some sesame paste. And then the odd flavours like; red velvet, chocolate or mango. And of course if you love to eat these then sure do - I have done it in the past as well. In my defense never the “watermelon or you want pie with that hummus”-version but I simply didn’t know how good and easy the real deal is.

This luxurious crumble can either eaten for dessert as well as for breakfast. It is a crumble especially for those who love a thick oat layer and the buckwheat flour and walnuts makes this crumble extra good.

XXl Cookies

As soon as I saw these cookies at The First Mess I knew I had to make them (and even double them). The First Mess is one of the few blogs where you know that the recipe is right and the outcome will taste amazing. So all credits for Laura. I doubled the recipe because more is always better and I have written it down in grams because it easier for us Dutchies and I also recplaced the avocado oil for sesame oil.

Yes the version of Feasting on Fruit of this tart looks way prettier but my current oven is weird and simply aims to burn things. Luckily the taste was still amazing and the powdered sugar trick came once again to the rescue. And this almond date tart is simply delicious.

Banana bread series chocolate

When we first shared a recipe for our banana bread series (click here for recipe 1 and here for recipe 2) someone on Instagram told us that her favourite recipe came from our cook book “Andere Koek”. And honestly, I do think that’s one of our best recipes. The workshop cake, breakfast cake and waffles are other great classics, but this one is actually really good! Vegan and gluten free…

Rhubarb lemon cake

A few days ago, we had our first couple of warm days of the year (not a fan, and not happy). We ate our first asparagus and turnips, and now the time has come for rhubarb. A while ago we made a rhubarb compote to go with this wonderful cheesecake, and now we have created a lovely lemon rhubarb cake.

This cake tastes wonderfully fresh and a little sour, but I think that’s what makes rhubarb actually taste like rhubarb.
