Rhubarb lemon cake

A few days ago, we had our first couple of warm days of the year (not a fan, and not happy). We ate our first asparagus and turnips, and now the time has come for rhubarb. A while ago we made a rhubarb compote to go with this wonderful cheesecake, and now we have created a lovely lemon rhubarb cake.

This cake tastes wonderfully fresh and a little sour, but I think that’s what makes rhubarb actually taste like rhubarb.

This pie has been quite the project. We began working on it last year for my birthday in January and only now , a year later, I can finally say we did it: a vegan and gluten free lemon meringue pie. Granola is the perfect recipe for someone who can’t bake to save their life, but it is also a great basis for a good healthy breakfast, and will give you a happy feeling for the rest of the week.

To be completely honest, this is also my way of cooking and baking: throw a bunch of stuff together and pop it in the oven. But, of course, Food Bandits does sound a lot nicer. We make a big bowl of granola regularly, and I have some every morning with some fresh fruits, and Johann drowns it in almond milk.

Vegan pavlova

This recipe has cost us a lot of sweat, blood and tears. Even though you can create some gorgeous white peaks from aquafaba (the water you find in canned chickpeas), I now found out the hard way that baking an actual classic pavlova with it is still quite a struggle. Easy vegan cake

Als je hier bent voor de cake, wat ik geheel kan begrijpen want dit is de ideale cake voor het 'zal ik ook eens vegan gaan bakken maar ik hou niet van bakken en ik lust eigenlijk ook wel vlees'- mens. U kent het wel, eigenlijk de meesten onder ons. Misschien helpt het als ik zeg dat dit een soort bananenbrood is en dat je daar eigenlijk nooit genoeg versies van kan hebben. 
Misschien dat de boekweitmeel wat 'geitenwollen sokken'- aanvoelt maar boekweit heeft een geheel eigen smaak en is niet duur. Ben je nieuw met boekweit dan raad ik je wel aan om de hoeveelheid genoemde dadels te gebruiken maar mocht je de smaak al kennen en heerlijk vinden dan kun je ook zeker met minder toe.

Vegan and GF Apple crumble pie

Het is heel lang geleden dat ik een taart als deze heb gegeten, een standaard deeg maken wat glutenvrij en vegan is valt niet mee. Je mist al gauw de samenhang en elasticiteit die gluten en eieren creëren in een deeg. Maar ik geloof dat het ons is gelukt en dan heb ik het nog niet eens over de heerlijke appelvulling.
En waar ik normaal van het gooi en smijtwerk ben vraag ik je nu om het recept te volgen.

Eton Mess of zoals Nigella het noemt: 'massamoord in een sneeuwstorm' is wat mij betreft het ultieme kerst dessert waar het niet alleen de drank ontbreekt. Waar normaal Eton mess wordt gemaakt met meringues en opgeklopte slagroom hebben wij een vegan versie voor je ontwikkeld. De meringues kun je een dag van te voren maken en waar misschien de drank ontbreekt maakt het fijn knijpen van de meringues weer een hoop goed.
